Monday’s Menu

Last Week’s Greek Style Shrimp and Orzo was a really tasty, quick meal. Definitely a keeper. I’m going to post it with pictures later today.

It’s another crazy week here with my daughter’s final district track meet and my son’s play that runs Wednesday through Sunday and family coming to see it. So, this is what I’m hoping will work with all that’s going on:

Monday- Meat and cheese sandwiches on homemade bread, fruit, chips (youth night)

Tuesday- Freezer Vegetable Soup, Pizza Roll-Ups (already made and frozen), veggie tray

Wednesday- Slow Cooker Ham-Bone Bean Soup, Artisan Bread (already made and frozen), salad

Thursday- Turkey Italian Sausages, roasted potatoes and carrots, salad

Friday- Spaghetti with sauce from the freezer, salad

Saturday- Homemade pizza

Sunday- Popcorn Shrimp (freezer), rice, salad (previous week’s meal we bumped for Mother’s Day)

I think when it’s busy like this is when a menu plan really helps, both on a sanity level and frugal level. I literally won’t have time to think of what to eat, which would’ve translated to at least a couple times running up to Subway to get a sandwich or some other fast food in the past. So at least with something planned for each day, I know what to prep the night before, if needed, and don’t have to stop and figure out something each day.

    It sounds like your menu will get you through your busy week. When I am busy, I like to keep things simple, have things in the freezer to use, and above all– plan ahead!

    Menu planning is my strategy when I’m busy! I do try to have things in the freezer that I can just toss in the oven or crockpot when things get so hectic that I can’t even get the meal prepared that I planned for, and that seems to help.
