This really isn't a "recipe," just my favorite way to eat fresh tomatoes in the summer. When the heirlooms start coming in, the plate could have orange, purple, or green slices which just makes for a great presentation.
The flavors are simple and pure and it's the easiest thing in the world, yet looks great. I've served this for company many times, but mainly I keep it all to myself.
Except now I'm sharing with you.
All you need are garden-fresh tomatoes, balsamic vinegar and some feta cheese.
I sometimes add fresh basil leaves for my version of the ubiquitous tomato, mozzarella, basil salad (Caprese Salad). I know many love this salad, but I always find the mozzarella to be bland even if it's the fresh type.
I much prefer the tang of feta. I'm sorta addicted to this salad and could eat it everyday when the tomatoes are ripe.
Slice your tomatoes and put them on a plate. Drizzle with the balsamic. Sometimes I add a few cranks of the pepper grinder though I don't salt them because the feta is salty. Sprinkle with feta and serve.
Think this is too simple? Think I'm making too much of a fuss over a plate of tomatoes?

Mmmm. So yummy. If I don't have feta I'll just do the balsamic and salt and pepper. But the feta, oh baby! Yours looks so pretty.

ReplyDeleteLast night, my husband was saying he really wanted to go to the store just to get mozzarella to have with our tomatoes. I told him about your feta tip, and he agreed since we had feta on hand. We loved it! I forgot about the balsamic, so we'll have to add that next time. Thanks for the tip!
