Monday's Menu



We're inundated with September produce that I'm attempting to "put up" for the winter (if it's free or cheap now, how can I say no?) - plums, pears, peaches, green beans, tomatoes, corn, zucchini, and basil to make enough pesto to last us until next summer.

So, for menu planning I'm trying to keep it simple while still using what we've got coming in from the garden. New this week are some Asian greens I planted the beginning of August: bok choi and Chinese cabbage, plus some beets and a few snap peas that are just starting to fatten up from their second planting. The abundance of fall is awesome!

Monday- Garden vegetable stir-fry, pot stickers, rice

Tuesday- (a "no braces" celebration for my daughter) Corn on the cob, crusty bread, grilled round steak with Basic Spice Rub, salad, and some kind of sticky-caramel dessert... :-)

Wednesday- Enchiladas, green salad with tomatoes, corn and beans

Thursday- Ground pork meatballs kabobs, carrot & cabbage slaw with feta and kalamata olives, pitas, hummus & chopped tomatoes

Friday- Swiss Chard Frittata, artisan bread, summer vegetable platter

Saturday- out of town

Sunday- Birthday dinner: *Italian Sausage Calzones with garden tomato sauce, salad, & cake
