Monday's Menu



While I see that some people are ending their participation in The Eat From The Pantry Challenge this week, I'm going all the way until the 31st. Since I still did some shopping (*a...hem*), we've got food in the house plus $10 left for milk and produce. No problem (said with tongue firmly in cheek).

No matter what, I'm writing the $100 check for Haiti this week, so I'd say this challenge has been a success that way. Another way was to truly show "how low can I go?" when needed. I could've easily shaved another $50 off by staying out of the drugstores for awhile. Granted, we would eventually start using up the stockpile, so it would be temporary, but it's nice to know when we need to, we have this flexibility. This is a much better feeling than living week to week- just buying what we need for that week with nothing to fall back on.

Which is going to come in handy over the next few months because we just got the diagnosis on our 12 year old truck: dying and not worth the cost to fix.

Oh yea, looks like we'll be having a few more of our own Pantry Challenges.

Monday- Tuna sandwiches, chips, carrots (youth night)

Tuesday- Italian Beef Stew (I'm going to modify this recipe, especially using broth and thickener instead of the jarred gravy), garlic mashed potatoes, salad

Wednesday- Brazillian Black Bean soup, artisan bread, vegetables and dip

Thursday- Dinner out (whoo-hoo!)

Friday- Crab cakes, Potato & Corn Chowder, salad, artisan bread

Saturday- Homemade Pizza

Sunday- Nachos with home-baked tortilla chips
