Monday's Menu



Well, here goes- as I outlined here, we are embarking on this challenge with a goal to spend less on food while using up some of what I've been stockpiling. The extra we save will go towards our house remodeling budget- specifically towards installing wood floors in our living room (yeah!).

Talk about your motivation.

Bring on the pasta and soups!

Heh, heh...as you can see from our menu, we won't have to be eating all pasta and soup- we'll actually be eating pretty well! I've even penciled out the entire month's menu after going through the freezer, and I think we're going to make it- I'm excited to see what I can save.

Monday- Chicken-Lime Enchiladas (using frozen chopped turkey), rice, beans, salsa, salad

Tuesday- Green salad with roasted beets and goat cheese, Herbed Top Roast, roasted potatoes and carrots

Wednesday- Ham bone soup (with my garden cranberry beans)*, bread bowl with bacon-cheese dip*, veggie tray

Thursday- Slow-cooker Italian chicken with artichokes and tomatoes*, buttered noodles, green beans

Friday- Baked Green Lentils, Greek green salad, artisan bread

Saturday- Pigs in a blanket (use quick breadstick recipe to cover dogs), oven fries, veggies and dips

Sunday- Leftovers
