Tuesday Garden Party- Tomatoes!

Remember when I shared my first few tomatoes with you two short weeks ago? You know how it goes: you wait and wait for the first tomato with even a hint of pink to it and then snatch it from the vine to finish ripening where you can see it in all it's glory on the window sill. Then you wait impatiently until you can take that first bite of the season's first tomato.

Finally it's red (or redish- I've been known to eat an orange tomato- and not the kind that's supposed to be orange! Hey, it's still better than store-bought...) and you cut it into beautiful slices and...

Aaaah. Sublime.

And then within two short weeks you get this:

And this:

Umm, yeah...

I guess they're here! And to that I say, "bring it on, baby!"

So now it's time to start the "putting up" part of growing tomatoes, which is what I did Monday morning.

A batch of Roasted Tomato Sauce yielded 5-1/2 quarts for the freezer. I love this recipe because I don't have to skin the tomatoes prior to roasting, so it takes a lot less time. Not to mention the flavor is so wonderful- and no one ever guesses I'm hiding other vegetables (mainly zucchini) in there as well!

Do you have any favorite recipes to use up garden harvests? Make sure to share them at the Parties over the next months as we reap the rewards of our labor!

  2. Congrats on your prolific tomato harvest! What variety got your top score for fresh tomato flavor? The roasted tomato sauce sounds very tasty, too, but I'm on a quest to collect some tasting notes for fresh tomatoes. :)

  5. Your tomatoes look fabulous!

I blew it I put the correct link for my garden blog, but the title for my cooking blog. My youngest kept me up most of the night so I am a little loopy this morning!

  11. So jealous! We are already having frost warnings and I have no pinking yet. Our summer has been so cool, we may not get any. I think I will have to set up a quick hoop house to get any tomatoes this year.

  12. I don't have a blog, but here is an easy summer tomato recipe. I don't have specific amounts but you can adjust depending on how many you are feeding. Dice up some tomatoes (for our family of four, I do about 4 med. size tomatoes), place in a bowl with some basil (fresh or not), add a little salt and pepper if you like. Let it sit for about 30 minutes so the flavors meld. Serve over cooked angel hair pasta and parmesan cheese if you desire.

Sometimes I cook the pasta the night before or in the morning. You could serve the pasta cold or run oder warm water. And there all kinds of things you can add - scampi shrimp, chicken, other spcies.

  13. Jami, those tomatoes are gorgeous! I'm going to be canning some tomorrow with green chilies. Mine aren't nearly so pretty though!
Thank you for hosting and enjoy the rest of your week!

  14. Such wonderful bounty! Still anXiously anticipating our first ripe tomatoes here (we have loads of green, but no red). Let's just say, the "Early Girls" were no such thing this year! Oh well, at least we've finally got some sunshine to help things along... In the meantime, the zucchini have eXploded and we're enjoying them immensely.

Thyme2garden- there's not many garden fresh tomatoes I don't like, but my favorites for flavor are Cherokee Purple and Brandywine. That said, I grow early tomatoes which is what I have now- Silvery Fir Tree, and heirloom, and Early girl, a hybrid with good disease resistance and good flavor. Then I try a few new ones each year. It's fun to experiment with tomatoes.

Yummy recipe, Shannon! I love fresh, raw tomato sauces, too!

Sharon- I've never done tomatoes with chilies- I'll have to try that this year!

  16. I made your Roasted Tomato Sauce this weekend for the first time and it was a big hit. My son licked his bowl to get the last of it. I had enough for 3 quarts. We at one for dinner with cheese ravioli and 2 are in the freezer now. I hope to get enough tomatoes to make another batch as I am pretty sure we will be seriously sad when it is gone.
