
What a weekend- I had the low of middle of the night nausea (followed by you-know-what) and the high of hosting my family for our spring workday. Lousy timing to be ill, but I was able to participate and, wow, what we accomplished:
- Second coat rolled and brushed on the house (yes, we got stopped by the weather last October and hadn’t ever done the touch-ups needed…)
- The backyard flower borders weeded, newspapered and mulched (yeah, yeah, yeah!!)
- The back porch/steps finished (one more step to the backyard transformation)
- The old dog run dismantled and moved from the backyard to a shed where it will become the run for the new chicken coop. This also included raking and moving about 4 wheel barrels full of gravel.
Needless to say, this list would’ve taken Brian and me (even with the kid’s help) weeks to complete, as we (like you all) try to work this stuff into our every-day lives.
And it’s all done in a day. I’m so blessed.
But I’m still not feeling well as I type this and food is the last thing I want to think about, so this week’s menu is pretty basic. What do you do when you don’t want to eat, but your family still needs to?
Monday- Pasta with shrimp and peas (I’m thinking in a cream sauce, similar to what I do with this pasta primavera dish), green salad (I’ve got lots of lettuce to use up this week, as it’s starting to bolt…)
Tuesday- Thai pork and vegetable curry (new, but easy- love the way coconut milk adds flavor to a quick curry), rice, Asian slaw (new)
Wednesday- Potato & caramelized onion Frittata (I’m adding spinach this time- I love how flexible frittatas are…), artisan bread, green salad
Thursday- Slow Cooked Spiced Whole Chicken, pasta salad, green salad
Friday- Homemade chicken pizza (using up leftover chicken)
Saturday- BBQ w/friends: grill sausages, slow-cooked molasses beans, slaw, green salad
Sunday- Leftovers

I believe a cottage can be anywhere or anything (condo, ranch, farmhouse) as long as you have a "cottage mentality" which puts people above things, celebrates imperfections, embraces simplicity, and finds joy in everyday life. Thanks for joining me!
