There’s a lot of stir-frys and vegetables on the menu this week. Can you guess it’s another week without kids as they’re both working at our church camp?
These dishes are also easy. Cut some garden-fresh veggies, and grill or stir-fry them quickly along with some easy meats and seafood = quick meals.
Which is good, because I’m starting to feel the countdown to the beginning of the new school year when I won’t have as much time to work on the projects around the house I’ve been wanting to get to. So this week we’re taking a trip to Ikea to purchase our new countertops, sink, and faucet. Wha-hoo! Hopefully I’ll have some finished kitchen re-do pictures to share with you soon!
I also am working on all the painting projects I’ve got halfway done (remember these chairs, anyone?). I got so cranky trying to do these with brushes and bottles of spray paint that I convinced Brian that a small-time electric paint sprayer is just what I needed. I’m SO hoping this is the answer to getting things painted faster.
I just have to figure out how to work it…
In the meantime, here’s what we’ll be eating:
Monday- Sweet & Saucy Shrimp w/ Green Beans, rice (bumped from last week ’cause we went out to dinner and a movie- yah!)
Tuesday- Soft tacos served with homemade salsa (bumped from last week, too…)
Wednesday- Chicken & garden veg. (zucchini, onion, cauliflower) stir-fry over noodles
Thursday- BBQ turkey thighs (will use Rhubarb BBQ sauce), creamed new potatoes & peas, green salad
Friday- Homemade pizza and movie night (after picking up the kids!)
Saturday- (guests) Grilled Teriyaki Chicken Thighs, Garlic grilled garden veggies (say that 3x fast!), coconut brown rice, Asian slaw
Sunday- leftovers

I believe a cottage can be anywhere or anything (condo, ranch, farmhouse) as long as you have a "cottage mentality" which puts people above things, celebrates imperfections, embraces simplicity, and finds joy in everyday life. Thanks for joining me!
