Monday’s Menu



Thank you all for your sweet words about my friend’s death. The trip across our state for her memorial service last week was totally worth it- to be able to celebrate her life and show our support to her family who will need to figure out their lives without their wife, mother, grandmother, and sister.

And here’s what I took away from it: there were a million things I would’ve rather been doing besides sitting in a car for a 14+ hour round trip drive, but whenever I take time for PEOPLE, I’m never sorry afterwards. In fact, I usually have an indescribable sense of joy and contentment (maybe from doing the right thing?).



And you know what? No one talked about her job at her funeral, nor how she kept house. They did mention her love for gardening and flowers (sweet!), but mostly they talked about how she spent time with them, loved them, cooked for them, laughed with them.

Creak…creak…creak. That’s the sound of me getting my priorities straight.

Yet again.

So what will this look like this week for me? Our daughter is home for the week before she’s gone again for another week of camp, so I’m going to schedule some time with her to do a few last “summer things” – though it’s supposed to be cooler and cloudy, bah! – and work on my projects around these outings.

Which is a big deal for me, because I’ve determined to apply the paper floor treatment to our master bedroom before the school year starts again. Plus some painting projects. And dealing with the garden produce that’s ripening (cucumbers, zucchini and beans mainly). Really, the list could go on and on.

But a list will always be there and our daughter won’t. Here’s to balance and doing all things well!

Hence the menu is simple- food is taking a back-burner this week (but menu planning isn’t!).

Monday- Soft Tacos (this is one of our quick go-to meals: brown meat, heat beans, chop veggies & cheese and add some home-canned salsa), bulk organic chips

Tuesday- Dinner at my sister’s house!

Wednesday- Pasta with shrimp and green beans (I’m making this up- I’ll probably make it similar to Pasta Primavera with cream…), green salad

Thursday- Daughter cooks (she hasn’t decided yet…)

Friday- Grilled salmon burgers on homemade buns (from the freezer), grilled garden vegetables, Grilled Potato Planks

Saturday- (daugther’s request) Calzones made with homemade pizza crust, Roasted Tomato Sauce, and chicken sausage.

Sunday- leftovers
