Tuesday Garden Party- Tomato And Corn Harvest

The tomatoes and corn are finally coming in!

I'm roasting my first batch (which is late - I usually get the first batch done in August) of Tomato-Vegetable Sauce and will be able to can the first batch of salsa.

I've got so many Black Cherry tomatoes and grape tomatoes that I'm going to try a batch of Roasted Tomato Sauce with them as well- it would be nice to find ways to use all the excess of small tomatoes.

If you have some recipes using these little tomatoes, I'd love to hear about them!

This is the last of the early corn, plus a few ears of our "main season" corn. I've put a number of frozen bags away and eaten my favorite Corn Casserole a few times, so I'm totally enjoying the corn.

I picked this picture specifically so that you couldn't see all the ends of the corn that were eaten away from the corn worms. This year was especially bad (after not finding even one last year!) and we only counted about nine ears without worms in them (out of four 20-ft rows...). Yeah- the kids were pretty disgusted when they helped shuck them.

Me, too- but I hid it well under the "it's just nature- just ignore it" mantra.

Ha! They'll never know how I was shuddering as well whenever my fingers encountered the "worm goo." Ugh. Hmmm, unless they read this...

How are you preserving the harvest now?

  1. We had picked a bunch of tomatoes, which I put in bowls on the kitchen counter, that the next morning something?!? had taken bites out of several of them. Turns out, our cat has a thing for tomatoes! Had to toss some, and put the rest safely behind cabinet doors.

Mollie Katzen has a good recipe using cherry tomatoes in her cookbook, which is entitled Vegetable Heaven. It is her Fantastic Bulgur Dish, which is cherry tomatoes, sauteed in some olive oil, with garlic and bulgur added, then water brought to a boil, then brough down to low and let simmer for about 30 min., so the water is absorbed. (Although she doesn't call for it, if you like, you could add some cooked ground lamb at this point and it would taste good also.) Fluff it up and serve with a great red pepper-walnut paste (also in this cookbook): toast walnuts and then process with garlic in food processor. Add roasted bell peppers, lemon juice, cumin, a little honey and salt and pepper, and whirl it up to a smooth paste. This is also really good as a veggi dip, or you could put it on sandwiches as well.

  2. Food in Jars blog has a great canning recipe for spicy Tomato Jam. Ideal made with small or cherry tomatoes because you don't seed or peel the tomatoes. With red pepper flakes and ginger it isn't anything you'd use on toast in the morning. More a spicy catsup substitute on a turkey burger or with cheese on crackers.

Don't you love Black Cherry tomatoes. It's the ease of cherry toms with a taste of a black. Yum!

  3. I was just reading on a blog that you can wash, core and blend them in the food processor. Use in any canning/freezing recipe that calls for tomato sauce.

Can't remember where I read it or I'd give you a link ;)

  4. Love the tomatoes and corn. I've been roasting all my cherry toms with whole garlic cloves and onions. Then I've put them in freezer bags to use over the next few month. I just purchased some Romas from a farmer today, I'm excited to try your dried tomatoes in olive oil!!! Should be fun!

Athena- That sound wonderful! I have some bulgur I've been wanting to use, so perfect- thanks for taking the time to share this. :-)

Anonymous- I had seen the Tomato Jam recipe, but forgot it called for cherry tomatoes - it kinda reminds me of my Addictive Tomato Chutney, which I LOVE, so I'm putting this on my TO-DO list. Thanks!

Shelley & Sakura- Yeah! One of the reasons roasting and pureeing appealed to me was the fact that there's no need to peel. I'm trying this now!

  8. Yummy!
I have been enjoying this broccoli salad. It calls for cherry tomatoes. Its amazingly yummy, and I am not a huge fan of broccoli salad. I made mine with toasted walnuts and it was amazing.
