Some of you may remember last year that I published how I store my dried tomatoes in olive oil and leave them on the shelf for storage. At the time, I had just heard that some sites were saying it was not considered safe anymore, though I could find no research to back this up.
I shared with you all I knew and left it up to you.
I’m happy to say I’ve found some new information that confirms to me that this method is still safe! You know how one of the dangers of the Internet is that something can get picked up and spread around without sound research behind it and taken as fact? This seems to be what has happened with this method.
However, if you are nervous about it, there is an option of heating the oil first, though there will be some loss of flavor. I love it when you have choices and can make your own informed decisions!

Jami, i do appreciate your input, however, please be advised heating herbs or other produce
in olive oil will, bring on a bad case of contamination and bot. There are many articles that
justify the chemistry of doing this. No reputable olive oil company would sell this kind of
product as ‘safe’……they know better. imagine the lawsuits? If one intends to use this kind of preservation, please be advised; keep in fridge and use quickly. This info comes from one
that has tried this technique and found out it does not work if one stores on a pantry shelf.

Hmmm, I appreciate your comment, but I’m confused as to what you’re addressing, as I don’t heat the tomatoes. I simply store them at room temperature and have never had any problems.
