Monday’s Menu

menu plan monday

If you follow AOC on Facebook, then you’ll have seen that after buying our new wood counters at Ikea last week, we’ve begun the last phase of our kitchen remodel. Woot!

I’ve never been so happy to see a tile counter be demolished before. Can I just mention (again…) how completely grossed out I was by our counters on a daily basis? I’m not talkin’ just ugly here – I’m talking too many years with who-knows-what on them (previous owners had many cats…) and no way to sanitize the grout to my liking.

I am SO looking forward to the smooth, flat surface to come – one that will be so much easier to clean – especially flour.

The work involved to get there? Not so much. Sigh. But it’s always the picture in my head of the end product that keeps me motivated through a DIY project. And this is a good one. {smile}

Food, though, is not so easy to prepare in a half demolished kitchen. We’ll eat a lot of fresh, and use our grill. This is the plan, anyway – who knows what we’ll actually end up eating? I know we won’t have to resort to eating out a lot, though, ’cause with tomatoes, beans, zucchini and corn (this week, I think!), we can always have something to eat if we add a bit of cheese and bread.

Which sounds a whole lot better to me than take out.

Menu:

Monday- daughter cooks (she’s thinking pasta…)

Tuesday- Chef’s salads with Honey-Mustard Vinaigrette, bread & fresh Tomato Bruschetta

Wednesday- Teriyaki Chicken-Vegetable skewers, Grilled Potato Planks, Garlic Green Beans

Thursday- Simple shrimp, garlic and vegetable saute, brown rice, green salad

Friday- Grilled chicken thighs, Caesar Slaw, Tomatoes & Feta, grilled Easy Sourdough Artisan Bread

Saturday & Sunday – visiting family

What kind of meals do you eat during big DIY projects?

  1. We like to keep it simple when we have DIY projects going on. Salads, crockpot meals, grilling out. No mess to clean up. :o ) Can’t wait to see pics of the new counters.
