This may seem odd, but my gift to you this year is this recipe for Cinnamon-Oat Pancake and Waffle Mix. Yeah, a pancake mix. What were you expecting – $100 gift card? {Oh, but you can try for that over here – there’s still time. Edit: time’s up, I hope you entered!}
Seriously, this took me by surprise last year as I was making it up to give to our family – it’s AWESOME! It’s sorta nutty from the oats, cinnamon-y, and totally different from the run-of-the-mill buttermilk pancakes.
Yes, it looks great layered in a quart sized mason jar and it does make a great gift, especially when paired with syrup and a fun whisk. But you’re gonna want to make a batch for your own family, too. Maybe a couple of batches.
And you’re definitely gonna want to be ready with the full recipe (not just the mixing instructions included in the gift) because whoever you give it to is going to be asking for it. Just sayin.’
Here’s how to make it:
Cinnamon-Oat Pancake & Waffle Mix
Ingredients needed and order of the layers to fill one quart jar (press each layer with the back of a spoon to level):
Layer 1:
- 1 c. whole wheat pastry flour
- 2 – 1/2 tsp. baking power
- 1 tsp. baking soda
- 1/4 c. sugar (white, raw, sucanat – even maple sugar is wonderful, though spendy)
Layer 2:
- 1 Tb. cinnamon (sprinkle around the edges of the jar so it shows)
- 1 c. whole wheat flour (regular) or spelt
Layer 3:
- 1/2 c. dry buttermilk
Layer 4:
- 2 c. oats (process briefly in a food processor to make some of the oats “quick” while leaving some whole)
Instructions to attach to jar:

Cinnamon-Oat Pancake & Waffle Mix
To use mix:
- Empty contents of jar into a bowl and mix well.
- Remove 1 cup for every batch of pancakes/waffles.
- Store the remainder in the jar for up to 3 months.
To make pancakes or waffles:
- 1 c. pancake/waffle mix
- 1 egg
- 2 Tbs. butter, melted
- 3/4-1 c. water (for waffles, only ¾ c.)
- Place the mix into a medium sized bowl.
- In a separate bowl, mix the egg, butter, and water together. Stir into dry mix, just until combined. Add more water for pancakes as needed for desired consistency. Let sit 1-2 minutes.
- Prepare griddle or waffle iron. Use 1/4-1/3 c. batter for each pancake. For waffles, use amount needed according to the waffle iron manufacturer’s directions.
*Each 1 c. batch makes about 6 four-inch pancakes or 4 five-inch waffles.

Love this! Question – were do you find Dry Buttermilk at?
I actually buy it bulk, Jennie, but I’ve seen it next to the cocoa powder (the container I’ve seen is made by the same company as a cocoa powder the store carries) in the baking section.
I can’t wait to make this for ME!!! Always looking for mixes that I can use that are easy and GF!
