We were blessed last Wednesday with a light December snow, which is somewhat rare in our neck of the woods. It snowed off and on all day, although the accumulation barely made an inch. But how awesome is it to be able to look at snow falling and all our Christmas decorations? That counts as a white Christmas in our house – woot!
On this Christmas Eve, I wish you all a blessed holiday spent, hopefully, with family and friends celebrating and remembering our Savior who was born to set all mankind free. All the snow, decorations and gifts amount to nothing without this central fact that brings the hope, joy, and love we all emphasize during this season. I pray it continues throughout the coming year…
And since it is Monday, here’s a glimpse of what I’m thinking about for our menu for this holiday week, but I’m keeping it flexible in case we want to do something spontaneous:
Monday- Bring a vegetable (I’m thinking I’ll make this yummy Garlic Baked Grated Carrots) to our family dinner
Tuesday- Merry Christmas! We’ll have our traditional brunch and then a homemade fish and chips dinner
Wednesday- Glazed Ham with mustard sauce, slow-cooker garlic scalloped potatoes, sauteed green beans, green salad with cranberries and feta
Thursday- Hearty Ham Bone Soup, Easy Artisan Sourdough Bread, carrots with homemade ranch dip
Friday- Pasta with Roasted Tomato Sauce and chicken sausage, green salad
Saturday- Homemade pizza, cut carrots
Sunday- Leftovers
I believe a cottage can be anywhere or anything (condo, ranch, farmhouse) as long as you have a "cottage mentality" which puts people above things, celebrates imperfections, embraces simplicity, and finds joy in everyday life. Thanks for joining me!

Jamie, can you share your fish and chips recipe? Hope your family had a wonderful christmas. I like your “dusting” of snow. I think we have about 6 to 8 inches on the ground right now. It’s been a really mild winter here.
The tradition is that my brother and Brian make that meal, ’cause I’ve done all the cooking up to Christmas – which I LOVE.
It’s pretty simple with liberal use of my basic spice rub. I’ll have to put it on our menu soon to snap a picture and post the recipe. Enjoy your snow!
