While I’m still working on getting our living room painted (now that the dining, entry and hallways have been done) after refinishing our floors, I sorta feel like I’m on a treadmill that is going to keep going through the month of September! The garden has decided to produce everything at once it seems (which is early for us since we’ve had a really nice summer for the first time in years), our daughter starts her senior year of high school, our son moves back before the University of Oregon starts again at the end of September, and our nephew from Arizona is coming to live with us after graduating last spring with the goal of attending the UO as well.
Since our calendar is filling with school, church, and family activities and I can see that I will be doing a lot of food preserving over the next month, our menu is going to be really easy and laid back – using a lot of garden produce along with simple grilled meats.
Here are some of my favorite easy recipes to use our September garden bounty that will be appearing on this month’s pared-down, seasonal menu:
Summer Pasta Salad with Tomatoes and Green Beans and grilled chicken or pork
Zucchini, Corn, and Tomato Saute served with ribs cooked in the slow cooker and finished on the grill
Grilled chicken or pork skewers with Authentic Greek Salad + grilled bread & Tzatziki
Zucchini and Feta Fritters (made early and reheated on the grill) along with grilled vegetables and meat
Grilled Hamburgers with Easy Chopped Salad
Garden Stir Fry on Baked Noodle Pillows (or rice…)
And of course we’ll be eating pasta with freshly made Roasted Vegetable-Tomato Sauce as I make it, yum!
